Waffles are reward and indulgence, care and leisure, all stacked up on your plate. And when they are homemade, they have a taste and texture seldom found in waffles available in frozen-food cases.
While eggs and bacon are guilt-ridden breakfast fare, waffles, especially those made with whole or multigrains, are more popular than ever, and for good reason. Waffles can be formulated to pack fiber and complex carbohydrates without much fat or sugars.
Each European country serves its own shape and flavor of waffle. Swiss waffles are light and crisp. Scandinavian waffles are heart-shaped.
And Belgian waffles, introduced in this country at the 1964 World`s Fair in New York, are a waffle we have come to love. They are thicker and more crisp than the waffles we grew up eating. The crispness on the outside is one of the things that makes waffles good.
When it came time to replace my stovetop waffle iron with a serious electric appliance, I turned to friend Patti Hardy who is a longtime Sunday-morning wafflemaker. She recommended the Vitantonio Belgian Waffler, which, despite its Italian name and Belgian design, is made in the United States.
The Vitantonio is almost everything a wafflemaker should be. It has a heavy stainless steel and Teflon grid that makes two 4 1/2-by-4 1/2-inch squares. And its automatic 400-degree temperature bakes waffles that are very crisp on the outside despite the steam-baking that takes place inside.
It has great recovery time. You can make two waffle squares every two minutes without lowering the temperature. And its Teflon coating makes it non- stick.

PATTI`S PECAN WAFFLES
Preparation time: 15 minutes
Cooking time: 15 minutes
Vitantonio 550 Waffle Maker Manual
Yield: 6 4 1/2-by-4 1/2-inch waffles
1/2 cup pecans, lightly toasted
1 1/3 cups flour
3 tablespoons sugar Shontelle impossible.
1 tablespoon plus 1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
3 tablespoons melted butter
1 1/2 cups soda water or seltzer
Vegetable shortening
1. Process pecans in food processor until fine; add flour, sugar, baking powder and salt; process until blended. Transfer to large bowl.
2. Whisk eggs in medium bowl. Add butter and whisk 30 seconds. Stir egg mixture and club soda into pecan mixture. Do not overmix.
3. Heat waffle iron until hot. Brush with vegetable shortening. Pour in about 1/2 cup batter. Cook according to manual instructions. Remove with wooden spatula when done. Repeat with remaining batter.
4. Keep warm in 275-degree oven before serving.
Sometime back in 2014, I mentioned to my parents that we needed a waffle maker. So with-out hesitation they immediately gave us their’s. I was pretty excited since this was still in the box with the original owners manual. How cool is that?
The waffle maker was manufactured by Vitantonio Manufacturing Company. At least that’s what is written on the front of the owner’s manual. The subject of this article “Quick Belgian Waffles” was taken from the owner’s manual/recipe book.
After reading the receipt we discovered it was purchased from Marshall Fields back in 1994. Anyone remember Marshall Fields? Must have been a Christmas gift. The owner’s manual includes several recipes. Since it was from the manufacture of course I had to try it out. However, since most books do not show step-by-step directions I’ve decided to create my own.
Here is how I make Quick Belgian Waffles.
First, gather the ingredients.
Start by scrambling 3 eggs in a mixing bowl.
Measure 1 tablespoon vanilla, and 1 cup of milk.
Add the vanilla and milk to the scrambled eggs.
Melt a 1/2 cup of butter.
Add the melted butter to the wet ingredients and set aside.

In another bowl mix the dry ingredients.
- 2 cups flour
- 1/2 teaspoon of salt
- 1 tablespoon baking powder
- 2 teaspoons granulated sugar
Whisk together the dry ingredients.
Add the dry ingredients to the wet ingredients and mix until batter forms.
Keep mixing until the lumps are gone or at least the batter is smooth as shown below.
Pour batter into heated waffle maker and cook as directed. For our waffle maker that is about 2 1/2 to 3 minutes.

Quick Waffles - Adapted and inspired from the owners manual of Vivantonio Manufacturing Company waffle iron.
- 3 eggs
- 1 cup milk
- ½ cup melted unsalted butter
- 1 tablespoon vanilla extract
- 2 cups flour
- ½ teaspoon salt
- 1 tablespoon baking powder
- 1 teaspoons sugar
- Scrabble 3 eggs is a mixing bowl.
- Add the vanilla and milk.
- Add melted butter.
- Mix the dry ingredients.
- Flour, baking powder, suga, salt.
- Add the dry ingredients to the wet ingredients.
- Mix until a batter forms. Its ok if it is a little lumpy.
- Pour over preheated waffle iron.
- Cooker 2 or 3 minutes.
- Prepare topps and serve.
